Sõsu Kombucha is a Portuguese project founded by Carolina, built around a thoughtful and artisanal approach to fermentation. Based in Sertã, in central Portugal, Sõsu produces kombucha using traditional methods that respect time, natural processes, and ingredient integrity.

At the heart of Sõsu’s kombucha is organic tea sourced from the Azores, grown in a unique volcanic and humid environment that gives the tea its distinctive character. Fermentation is slow and natural, with no pasteurisation, no filtration, and no artificial additives, allowing the drink to retain its living cultures, complexity, and depth. Carbonation develops naturally during fermentation, without added gas.

Sõsu’s flavour range reflects a balance between simplicity and creativity, combining tea with carefully selected natural ingredients. Varieties include Lemon & Mint, Ginger, Coffee, and Medronho — the latter developed in partnership with local producers, highlighting regional ingredients and collaborations.

Through small-scale production and a strong connection to origin, Sõsu Kombucha represents a conscious alternative to industrial soft drinks. The project values transparency, craftsmanship, and balance, offering a fermented drink that is refreshing, expressive, and deeply rooted in place.
